Check this one out from Motor Age if you want to perform a relative compression test without an amp clamp. Also notice the AC coupling.

Can you show us the same capture, but zoomed out? 500mS or 1 second on the screen would be great.
It seems like the amp probe is struggling to measure current consistently... If you were to use the same probe on a steady draw (headlight, blower motor), does it behave the same way?

With a 3.5 V6 the starter will take a huge current out of range of your clamp, as already suggest do a voltage relative compression instead .
When working single handed I do voltage relative compression test by just plugging into the cigar lighter socket. I first do an DC test to check the cranking voltage to check battery condition and charging then switch to ac for relative compression.
